Vegetarian Squash & Tofu Chili

A hearty vegetarian chili made with roasted winter squash, seasoned tofu, tomatoes, and quinoa for extra heartiness. Served with crispy homemade tortilla chips and a dollop of sour cream.

Cozy, plant-powered comfort in every bite.

Comfort food doesn’t have to be heavy to be satisfying. Our Squash & Tofu Chili combines sweet roasted winter squash with seasoned extra-firm tofu, slow-simmered San Marzano tomatoes, and warming spices for a rich, deeply flavorful bowl that’s perfect any day of the week.

A touch of Calabrian chili paste adds gentle heat while quinoa lends a hearty texture and an extra boost of plant-based protein. The natural sweetness of roasted squash balances the smoky paprika, cumin, and oregano, creating a chili that’s both comforting and vibrant.

Every serving comes with crispy homemade tortilla chips for scooping and crunch, plus a cool dollop of sour cream that melts beautifully into the warm chili, adding a creamy finish to every bite. It’s a wholesome, satisfying meal that’s packed with vegetables, bold flavors, and the kind of homemade goodness you can only get from a chef’s kitchen.
