Parmesan-Crusted Salmon or Tofu & Squash Succotash

Wild salmon or tofu topped with a buttery Parmesan-herb crust and served with golden roasted potatoes and colorful squash succotash with lima beans, corn, okra, and tomatoes.

A Golden, Savory Favorite with a Fresh Seasonal Side

A crisp, savory topping can transform a simple piece of salmon into something special. Chef Susan tops wild salmon—or tofu for a plant-forward option—with a mixture of Parmesan, breadcrumbs, fresh thyme and chives, garlic, and melted butter.

Baked until golden, the crust adds just the right amount of crunch while keeping the salmon tender and flaky or giving the tofu a flavorful, satisfying finish. On the side, roasted russet potatoes keep things simple and comforting, while a colorful squash succotash brings plenty of vegetables to the plate.

Zucchini, sweet onion, bell pepper, baby lima beans, okra, corn, and tomatoes are cooked together with a splash of apple cider vinegar for brightness. It’s a balanced, chef-crafted meal that’s hearty without feeling heavy, with plenty of vegetables, satisfying protein, and fresh flavors in every bite.
